Vegan Baked Ziti
Nov. 17th, 2019 08:00 pm"But what do you eat?" is something people ask me when they find out I'm vegan - people don't seem to be able to grasp the idea of meals that don't contain meat or dairy. But it's really not that difficult!
Tonight I cooked a new recipe that I found on Pinterest, Vegan Baked Ziti
Add cooked ziti noodles to a lightly greased casserole dish, then pour a jar of marinara sauce over the noodles. If adding vegan ground “meat”, add it now as well. Stir a little bit.
Add vegan soft cheese, then add it to the pasta. Stir lightly, but not too much, leaving pockets of cheese throughout.
Top with a bag of non-dairy grated cheese..
Bake, uncovered for 25 minutes until hot. Sprinkle with chopped parsley, if desired.
It was absolutely delicious, & so quick & easy. I will definitely be adding it to my repertoire
